It’s fall and I’m in Germany for a few months, which means I’m indulging in tons of pumpkins, squashes and delicious winter veggies! I’ve had this delicious Butternut Mac no Cheese recipe a long time coming and wanted to film it in forever, as it’s super simple, requires only 5 ingredients (+ salt & pepper) and is so healthy and delicious! 🙂 I’ve made it for my mum, boyfriend and myself already numerous times and they all loved it – so I thought I’d share it with you!
This Butternut Mac no Cheese has basically been my easy go-to meal in the past weeks and I just can’t get enough of its simplicity and taste! If you have been following me around since the beginning you’ll be familiar with my other Healthy Mac ‘n Cheese recipe, which is made with potatoes, carrots and onion.
They’re both amazingly healthy – the first one, however, is much more starchy and has quite a different taste. I love them both but have preferred the butternut squash one even more lately. You should try them both though and decide for yourself! 🙂
I’ve paired the Butternut Mac no Cheese with my favorite spelt macaroni, which I encountered a few weeks ago in a German supermarket (REWE), but feel free to use whatever pasta you have!

- 2 cups butternut squash, steamed/cooked
- ⅓ cup cashews, soaked 6-8 hours (if you forgot to soak just boil them in water for 10 minutes)
- 2 garlic cloves
- 1 cup low sodium vegetable broth (more or less depending on desired consistency)
- ¼ cup nutritional yeast
- salt & pepper, to taste
- Peel, dice and steam your butternut squash until soft.
- In another pot, cook your pasta according to instructions.
- Add all the ingredients into your high-speed blender, and blend until smooth.
- Pour the sauce over the pasta. Add chilli flakes, pepper, steamed spinach and other veggies as desired!
