On some days, I wake up so hungry that green smoothies and acaí bowls just don’t cut it and my body is craving for something else! On these days (or any other day), a stack of pancakes always helps! These beauties are so unbelievably delicious and perfect for a lazy Sunday morning or weekend brunch. They are super simple to make, you basically just throw all the ingredients in a bowl and mix them together. Instead of the pecan nuts you can also just throw in some chocolate chips or walnuts, but personally I really loved this combination. If you don’t want to use caramelised pecans, just buy natural ones (or caramelise them yourself with maple syrup). Add as many fruits and maple syrup as you want an enjoy!
- 1 banana
- ⅛ cup maple syrup or pure date syrup
- 1 Tbsp coconut oil
- ½ tsp pure vanilla extract
- 1 tsp baking powder
- 1 cup whole wheat flour
- ⅓ cup crushed pecan nuts (caramelised or natural)
- 1 cup almond milk
- 1 Tbsp chia seeds (soaked in water)
- 1 Tbsp almond butter
- coconut oil for greasing the pan
- 1 banana
- 4-5 strawberries
- a handful of crushed pecans
- maple syrup
- Soak the chia seeds in small amount of water.
- In the meantime, place all other ingredients in a medium sized bowl.
- Add the chia seeds and mix well together.
- Heat a pan on the stove and grease with melted coconut oil.
- Pour in small amounts of the mixture to make small pancakes (you can make several at a time if you use a bigger pan).
- Add toppings and enjoy!

Could you use peanut butter instead of almond butter?
Definitely! You can basically use any nut butter you like! 🙂
Can you use a different kind of flour?
Of course! You can easily make it gluten-free or adjust it to any other flour! So far, I’ve tried this one with normal whole wheat, buckwheat and oat flour, but I’m sure others would also work!
