Today I’m going to share with you my absolute favourite salad recipe! This beautiful avocado pomegranate salad with a creamy dressing is not only incredibly fresh and colorful, but will surprise you with the variety of flavours it contains! Personally, I think that the combination of avocado, sweet potato and pomegranate is just perfect and, hopefully, so will you! Pomegranates are finally in season and I couldn’t wait to share the first recipe with all of you! Did you know that pomegranates are amongst the healthiest fruits on this planet? They are loaded with important nutrients like fiber, protein, vitamin C and K, folate and potassium and has quite impressive anti-inflammatory effects. Numerous studies have shown that the extract of pomegranates can even slow down cancer cell production – do I need to say more? 🙂
Basically, apart from the fact that pomegranate seeds are super juicy and tasty, you should eat them as often as possible as they’re incredibly healthy! My friendly real estate agent here in Cyprus just gave me a huge bag full of freshly picked organic pomegranates straight from the tree in his garden and I can’t wait to include them in more of my recipes. So far, they have been a great add-on to all of my salads, smoothie and nice cream bowls!
The dressing of this avocado pomegranate salad is equally yummy and completely raw, oil – and salt-free. Usually salad dressings are loaded with empty calories through some sort of processed oil and too much sodium. This dressing, however, is extremely fresh and creamy, thanks to the avocado. The apples, lime and orange juice give it a nice sweet twist and will surprise your taste buds! If you try it, please let me know what you think! 🙂
- 1 head of lettuce, cut
- 1 can of kidney beans (or black beans), rinsed
- 3 small sweet potatoes, diced
- seeds of 1 pomegranate
- 2 cucumbers, sliced
- ¼ cup cilantro, cut
- ½ avocado, diced
- ½ red onion, sliced
Dressing:- ½ avocado
- ⅓ cup cilantro
- juice of 1 lime
- ½ apple
- juice of 1 orange
- Dice the sweet potato and steam/ boil until slightly soft (not too soft as it will get mushy in the salad).
- Prepare the rest of the veggies and fruits as instructed.
- Place all the ingredients in a big salad bowl and combine.
- For the dressing, place the ingredients in a high-speed blender and blend until smooth.
- Pour the dressing over the salad and combine.
