Thai Soba Noodle Salad

  • 100g soba noodles
  • ⅓ cup green onions, cut into pieces
  • ⅓ cup edamame, cooked
  • 1 carrot, sliced
  • 1 cucumber, spiralized
  • 1 Tbsp whole sesame seeds (black or natural)
For the sauce:
  • 2 Tbsp natural peanut butter
  • 1 Tbsp tamari sauce
  • 2-3 Tbsp warm water (depending on desired consistency)
  1. Cook the soba noodles according to the instructions on the package.
  2. In the meantime, cut and slice up the veggies.
  3. For the sauce whisk all ingredients together in a small bowl (add more water if you want to be more liquid).
  4. When the noodles are ready, mix everything together in a big bowl and top with sesame seeds! If you prefer, you can let the noodles cool down a bit before adding into the bowl.
