Chocolate Chip Cookie Bites

Ingredients

  • 1 can chickpeas (15oz), drained and rinsed
  • 1/3 cup oat flour
  • 1/3 cup natural peanut butter, melted
  • 1/8 cup almond milk
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1 tsp baking powder
  • •••••
  • 1/3 cup dark vegan chocolate chips

Instructions

  1. Preheat the oven to 180°C/ 350°C and line a baking tray with parchment paper.
  2. Place the first 7 ingredients in your high-speed blender/ food processor and use the blender stick to mash them down until you have a more or less smooth batter (it’s ok if there are still a few chickpea pieces left).
  3. Place the batter in a bowl, add in the chocolate chips and combine with a spatula.
  4. Use your hands to form small bite-sized balls and place on the baking tray.
  5. Place the tray in the oven and bake for 10-15 minutes.
  6. Enjoy warm or store in air-tight container for a week!
