- 3 ripe bananas
- 1 cup (250ml) plant milk
- 1/8 cup (30ml) coconut oil, melted
- 1/4 cup (60ml) maple syrup
- 1 Tbsp chia seeds
- 1 Tbsp flax seeds
- 1/4 cup (45g) coconut sugar
- 1 Tbsp baking powder
- 1/2 tsp Himalayan salt
- 1 tsp cinnamon
- 1 cup (96g) almond flour
- 1 cup (80g) rolled oats
- 1 cup (130g) whole wheat flour
- 1 cup walnuts, roughly chopped
Instructions
- Preheat the oven to 175°C and line a 20cm loaf tin with parchment paper.
- Place the bananas in a medium sized bowls and mash them with a fork. Add the liquid ingredients and combine.
- Sift in the dry ingredients and mix together until just combined.
- Pour the batter into the tin and place in the oven to bake for 55-60 minutes until a toothpick inserted comes out clean.
- Let cool down a little before removing from the cake tin and enjoy!
