Banana Walnut Bread

Ingredients

  • 3 ripe bananas
  • 1 cup (250ml) plant milk
  • 1/8 cup (30ml) coconut oil, melted
  • 1/4 cup (60ml) maple syrup
  • 1 Tbsp chia seeds
  • 1 Tbsp flax seeds
  • 1/4 cup (45g) coconut sugar
  • 1 Tbsp baking powder
  • 1/2 tsp Himalayan salt
  • 1 tsp cinnamon
  • 1 cup (96g) almond flour
  • 1 cup (80g) rolled oats
  • 1 cup (130g) whole wheat flour
  • 1 cup walnuts, roughly chopped

Instructions

  1. Preheat the oven to 175°C and line a 20cm loaf tin with parchment paper.
  2. Place the bananas in a medium sized bowls and mash them with a fork. Add the liquid ingredients and combine.
  3. Sift in the dry ingredients and mix together until just combined.
  4. Pour the batter into the tin and place in the oven to bake for 55-60 minutes until a toothpick inserted comes out clean.
  5. Let cool down a little before removing from the cake tin and enjoy!
